It was such a joy to work with Mallory and Sebastian for their summer-wedding dessert tables and cutting-cake, set at Ethereal Open Air Resort. I had the honor of catering small-batch desserts made with meticulous care and fresh details for their guests to enjoy.
Most of the photos provided on this post are by Emry Photography.
The dessert buffet spread was plated all-white, with a lovely assortment of mini-cakes, parfaits, custards, fruits and pastries that offered guests many of the couple’s favorite treats to enjoy.
It was so nice for me to work with such a decisive team and a beautiful couple. They sat down with me months before their big day for a tasting and consultation, and found me because I specialize in custom recipe work, and would make their cake and chosen desserts completely gluten free. Mallory has Celiac and like any bride, she deserved to have her wedding cake and eat it too!
Offering fresh fruit was part of the creative process for their dessert menu.
Strawberries were highlighted with Strawberry Shortcake parfaits in full-size servings, that were plated alongside fresh-baked Choux Pastries made as Cream Puffs. Bunches of Chocolate Covered Strawberries assorted in white and dark chocolate were placed on pedestals on either end.
Fresh blackberries were the garnish onto mini Creme Brulee.
Black Forest were displayed in the form of mini cupcakes, complete with chocolate shavings and a perfectly-placed fresh cherry on the top.
Mini cupcakes were just the right size, to encourage guests to enjoy more than one dessert.
Their gluten free cutting-cake featured layers of Vanilla Velvet and Red Velvet cakes and vanilla cream cheese filling, covered in ribbed vanilla buttercream. It was so thoughtful and romantic when Sebastian would order this same flavor for Mallory’s birthday months later, because she loved it so much.
The flowers! I get so excited about this part! I expertly arranged the florals given to me, to create a single cascade and front-overflow arrangement. I loved every moment of making this cake!
I was fortunate to get my hands on such beautiful blooms. A giant white peony, large light-blush roses, mini garden roses, spray roses and white dahlia. The only greenery were leaf-clippings from the white dahlia.
My friend Karen, of Flowers Made With Love is such a talented florist! Along with her team they did an amazing job with the tables and all of the gorgeous floral arrangements. I always love any opportunity to have our work within the same space.
I typically leave the best part of my work for last. The wedding cake was just about to be placed as the centerpiece.
