It’s summer time, and I like to try to make it easy and fun. For kids of any age, and all year-round, breakfast is definitely more fun when it’s labeled “ice cream.”
This recipe feels right and tastes even better. It’s banana-based, dairy-free (and vegan), with no added processed sugars. It’s a way to pretend I’m serving ice cream for breakfast, made with three simple ingredients.

I’m sure you’ll love this dessert anytime of the day. I like to offer it once in a while, as a breakfast alternative since it’s so easy.
Now a days, you can make or find fresh-ground nut butters in the store. I recommend this so that there is no added sugar. I’m offering sunflower seed butter because all of my recipes are nut-free and we do not use soy-based-butters at home.
Mili’s Sweets “Ice Cream For Breakfast” Recipe
Here’s what you’ll need:
2-3 ripe bananas
3 tablespoons sunflower seed butter (smooth)
2 tablespoons honey
(As most of you know, I only share recipes that are free of peanuts and tree nuts, because it’s the only way I prepare food, due to my son’s allergies. Sun butter is my son’s favorite option for a nut-free spread. This is the back-up in my pantry, in case I run out of the sunflower seed butter spread that I make for our family.)
Here’s what you’ll do:
Slice ripe bananas and place into your food processor with the sun butter and honey.
Mix for 10-20 seconds, until most of the bananas are smooth.
Spoon the mixture into a freezer-safe container. Cover and freeze for 6 hours, or overnight.
Scoop and enjoy!
There are many ways to switch-up this recipe. Here are a few other flavor combinations:
CHOCO-BANANA: 2 bananas, 2 tablespoons honey, 2 tablespoons mini chocolate chips
BANANA-BERRY: 2 bananas, 2 tablespoons honey, 3 tablespoons berry compote
PLAIN-JANE: 2 bananas, 2 tablespoons honey
