At home, we had a special reason to put this frosting to the test. We celebrated all of our April birthdays at once! I made each birthday babe their own 4-inch cake, which made the whole night feel extra personal and fun.
Everyone wanted to be surprised with my baker’s choice, so I created cakes according to what I thought they’d like (with little hints). My husband got a rich chocolate cake filled and topped with chocolate whipped cream cheese frosting. Sammie’s cake featured chocolate and marble brownie bite layers, paired with whipped vanilla cream cheese frosting and finished with polka-dot chocolate pipings.

Bret’s cake was a lighter, fruit-forward option: vanilla Italia cake layers soaked with blueberry pie filling and topped with blueberry whipped cream cheese frosting. And for the baby, I created a special baby’s first cake layered and frosted with a sugar-free whipped raspberry cream cheese frosting.
These cakes were hits! Little as they were, we were able to share at our little family dinner party and it was so much fun and so memorable. The highlight of the night of the night was watching Baby dive headfirst into her cake and basically wear it—it was messy, adorable, and completely worth it.

- 2 ounces cold cream cheese
- 4 tablespoons granulated sugar
- 1 teaspoon pure vanilla extract
- 1 cups heavy whipping cream
chocolate whipped cream cheese frosting
- 2 ounces cold cream cheese
- 4 tablespoons granulated sugar
- 1/4 cup unsweetened cocoa For a lighter, milk-chocolate flavor, use 2 tablespoons. For dark chocolate flavor, use up to 1/4 cup. (I'm using Guittard brand, Dutch process.)
- 1 teaspoon pure vanilla extract
- 1 cups heavy whipping cream

Instructions

- Whisk cream cheese until it covers the bottom of the bowl.
- Add sugar and vanilla extract. Whisk and scrape the bowl.
- Add heavy whipping cream. Whisk until begins to peak. Scrape the bowl.
- Whisk until fully peaked. Pipe or plop onto your favorite treat.

- Whisk cream cheese until it covers the bottom of the bowl.
- Add sugar, vanilla extract, and unsweetened cocoa. Whisk and scrape the bowl.
- Add heavy whipping cream. Whisk until begins to peak. Scrape the bowl.
- Whisk until fully peaked. Pipe or plop onto your favorite treat.

- prep: For any berry other than raspberry, you need to chop as finely as possible. For strawberry, use fresh and the skins only. For blueberry or cherry, I recommend using the first-frozen fruit because the sweetness tastes more concentrated. Allow the fruit to thaw so that the fruit it is still cold.
- Whisk cream cheese until it covers the bottom of the bowl. Add sugar. Whisk and scrape the bowl.
- Add heavy whipping cream. Whisk until begins to peak. Scrape the bowl.
- Add berries. Whisk until fully peaked. Pipe or plop onto your favorite treat.

- Add cream of tartar, the heavy whipping cream, and vanilla if using.
- Whisk until begins to peak. Scrape the bowl.
